Let’s talk about black eyed peas, and no, not the band that Fergie is (or was) in. Typically they are seen in southern cooking with bacon or pork. But they actually are really delicious in salads, and as in this recipe, they can stand their own as the main ingredient. You can find black eyed peas in a can, or you can boil them yourself. I typically just use the kind in the can, just remember to drain and rinse them well.
1 can black eyed peas
1 cup sliced cherry tomatoes
3 green onions, chopped
1 tablespoon chopped parsley
1 teaspoon dried oregano
1/2 cup crumbled feta cheese
salt and freshly ground pepper

Vinaigrette:
2 tablespoons fresh lemon juice
1 shallot, finely chopped
5 tablespoons extra virgin olive oil
salt and freshly ground pepper

Rinse black eyed peas, drain, and place in a bowl along with the sliced cherry tomatoes, chopped green onion, parsley, and oregano. Combine ingredients of the vinaigrette and whisk olive oil into vinaigrette.

Pour vinaigrette over mixture and toss to coat. Add in the feta and salt and pepper to taste. Serve!
